Weiss Distribution Technique — break up clumps, level the bed. Use a needle or toothpick in a star pattern.
Level Tamp
Firm, flat pressure — 15–20kg. Tamp face must be perfectly level. A slight polish twist at the end is fine.
Lock In Portafilter
Seat firmly. Start extraction within 10 seconds of locking in — dry puck heats and causes bitter extraction.

Flush the group head for 3 seconds, then wait 10 seconds before locking in. The wait lets the temperature drop to the ideal extraction range.

What to look for
Good: Slow honey-like flow, mouse-tail start, caramel-brown colour
Too fast: Watery, pale — grind too coarse or under-dosed
Too slow: Almost no flow, very dark — grind too fine or over-dosed

Start with cold milk
Cold almond milk gives you more working time before it breaks. Use 110–130ml for a flat white.
Surface incorporation first
Tip of wand just below surface — 2–3 seconds of "chirping" to incorporate air into almond milk before submerging.
Stop at 62–65°C
If no thermometer: stop when the jug is hot but still touchable for 2–3 seconds. Almond breaks well before dairy would.
Tap and swirl before pouring
Tap jug firmly on bench to break large bubbles. Swirl to integrate the foam. Pour immediately.
